ZZQ

A vision of the quintessential Texas barbecue restaurant transplanted to central Virginia, ZZQ is the culmination of a passion project of F&S partner Chris Fultz and Alex Graf. What began as a mission to learn and perfect the techniques of renowned pitmasters became an obsessive journey of custom-made smokers, an annual backyard party for friends and family, a wildly popular pop-up at Ardent Brewery, and finally the design and construction of a new home for ZZQ.

The building’s design features a manufactured metal structure nested within the salvaged shell of an existing brick building, a utilitarian approach that is complemented by custom artisanal oak and metal fabrications throughout. The restaurant sits in the new building, the BBQ smokers in the sheltered ruin, and a shady outdoor patio in back.
